Ingredients
- Turkey neck, tail, heart and gizzard reserved from turkey
- ⅓ cup all-purpose flour
- ⅓ cup butter
- ⅔ cup yellow onion diced
- ⅓ cup celery diced
- ⅔ cup green bell pepper diced
- 2 cloves garlic minced
- 2 chicken bouillon cubes
- 2 teaspoons Down Home Seasoning Blend
- 2 teaspoons House Seasoning Blend
- ½ teaspoon salt
- ½ teaspoon pepper
- 5 cups water
Instructions
- Rinse the turkey neck, tail, heart and gizzard; pat dry and set aside.
- In a medium saucepan over medium heat melt the butter, stir in the flour. Continue stirring consistently until the roux turns light brown, the color of butterscotch; about 5 minutes.
- Stir in the onion, bell pepper and celery; cook 3 minutes. Stir in garlic; cook 30 seconds.
- Whisk in the water, bring to a boil; stir in the Down Home Seasoning Blend, House Seasoning Blend, bouillon cubes, salt and pepper.
- Add in the turkey neck, tail, heart and gizzard. Cover reduce to a simmer and cook on low for 4 hours.
- Strain through a wire mesh strainer into a bowl, discard all of the solids and serve.
