Ingredients
- 15 pound Turkey
- 4 tablespoons Down Home Seasoning Blend
- 4 tablespoons House Seasoning Blend
- 1/2 yellow onion chopped
- 1/2 green bell pepper chopped
- 1 celery chopped
- 4 cloves garlic smashed
- 1/4 cup olive oil
- 1/4 cup butter melted
- 1 cup water
- Down Home Seasoning Injection:
- 1 cup chicken stock
- 1/2 cup butter melted
- 2 teaspoons Down Home Seasoning Blend
- 2 teaspoons House Seasoning Blend
Instructions
- In a small bowl combine the Down Home Seasoning Blend and the House Seasoning Blend. Mix well; set aside.
- Remove giblets from the neck and cavity. Discard or reserve for later use.
- Inspect the outside of the bird, remove any feathers or pinfeathers. Rinse well and pat dry.
- Using your fingers, gently loosen the skin across the breast and down the thigh and leg.
- Rub the seasoning blend mixture under the skin into the meat of the breasts, thighs and legs.
- Rub the seasoning blend mixture in the cavity of the bird and stuff cavity with the onion, bell pepper, celery and garlic. Let stand 1 hour to marinate and to come to room temperature.
- Preheat oven to 350ᵒF.
- In a bowl, combine all of the injection ingredients mix well and set aside.
- Inject the meatiest part of the breasts, wings, thighs and drumsticks.
- Brush the entire bird with the olive oil and then with the butter.
- Season the outside the bird generously with the remaining seasoning mixture.
- Tie the legs together with kitchen twine and tie the wings close to the body of turkey.
- Place bird in pan with a rack and pour 1 cup of water in the bottom of the pan. Roast for 3 hours or until the breast of the bird reaches an internal temperature of 165ᵒF.
- Remove turkey from oven and let rest for 30 minutes before carving.
