Ingredients
- 4 Bunches of Collard Greens
- 1 Smoked Turkey Wing
- 3 tablespoon vegetable oil
- ⅔ cups white onion diced
- 4 cloves garlic minced
- 2 ½ cups chicken stock
- 2 tablespoons sugar
- 1 tablespoon vinegar
- 2 teaspoons House Seasoning Blend
- 1 teaspoons red pepper flakes
- Toppings:
- Diced white onion
- Diced pickled jalapeno
- Diced tomatoes
Instructions
- In a 4-quart crock-pot set on high, add 1 ½ cups of the stock and smoked turkey. Cover and cook for 2 hours.
- Rinse, dry and remove stems from greens. Tear or chop into bite-sized pieces, set aside.
- In a large skillet over medium heat add the oil. When hot add the onions; cook for 3 minutes. Stir in garlic cook 1 minute.
- Stir in remaining stock, sugar, house seasoning, red pepper flakes and vinegar. Bring to a boil.
- Start adding greens by the handful, adding more as they wilt, until they are all in the skillet.
- Add mixture to crock-pot. Cover and cook for 3 hours or until tender. Serve with desired toppings and pass the cornbread!
