Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup cold butter cubed
- 6 tablespoons sugar
- 6 tablespoons chopped pecans
- 3/4 teaspoon vanilla
- 1/4 teaspoon salt
- 1 cup powdered sugar plus more for rolling
Instructions
- Pre-Heat Oven to 375ᵒF.
- On a sheet of wax paper combine flour and salt. Stir and set aside.
- In a bowl with an electric mixer, beat cold butter at high speed until smooth about 1 minute, beat in sugar for 2 minutes. Beat in vanilla until well blended. Stir in flour mixture to form a soft dough. Stir in pecans.
- With a 1 tablespoon cookie scoop, scoop the dough and shape into balls. Place 2 inches apart on a baking sheet; bake 10 minutes.
- Cool 5 minutes roll each cookie in powdered sugar. Transfer cookies to wire racks to cool completely.
- Roll in powdered sugar again.
